Strawberries and Cream Baked Donuts

- 1 cup (130g) whole-wheat pastry flour

Instructions
Preheat the oven to 425° (218°C). Coat a regular 6-well (1/3 cup/79ml) donut pan with cooking spray.
In a big bowl, whisk collectively the pastry flour, coconut sugar, baking powder, cinnamon and salt. In a medium bowl, whisk the buttermilk, egg and oil. Add the buttermilk combination to the flour combination and stir with a rubber spatula till simply mixed. Fold within the strawberries. Don’t over-mix, or the donuts develop into robust.
Divide the batter into the ready pan and press it down into the donut molds evenly. Bake till golden brown and a toothpick inserted into the donuts comes out clear, 8–10 minutes. Let the donuts cool within the pan for 10 minutes after which switch them to a rack to chill fully.
Sift the powdered sugar right into a small bowl. Add the milk and stir to create a thick glaze. Place the donuts on a plate, backside aspect up, and drizzle with the glaze. Sprinkle with the crushed freeze-dried strawberries and serve.
